2014 Shadow Canyon
Situated at 1,600’ elevation, a mere 8 miles from the ocean, Shadow Canyon is one of only a few vineyards in the York Mountain AVA. The warm days yield to cool nights allowing for a long growing season and ideal ripening.
Fermented with 50% whole clusters in open top bins. The wine spent 15-20 days on skins with pump-overs during cold soak and punch downs during fermentation. Aged 20 months in 265 and 228-liter barriques, 50% of which were new French Oak.
Smoked meat, brine, squid ink, grilled herbs, Easter lily, bitter chocolate, Moroccan spices, tandoori, sea breeze, plum, and dark berry.
